My vegan ribs stirred up a lot of confusion so in class today we’ll clear all that up. Let’s go over what VITAL WHEAT GLUTEN is & how uneducated people sound reducing it to “BBQ bread”.

 

Vital wheat gluten is the protein found in bread. It appears like a flour but ITS NOT FLOUR! It’s also a nutritious source of protein, containing more protein per ounce than tofu (if you’re not allergic to gluten). When VWG is cooked it becomes more “elastic” and shreds like meat. Once it has the consistency of whatever meat you’re making all it comes down to is seasoning it the exact same way you normally would. It can be made into chicken, burgers, ribs, etc.

 

Cooking your VWG creates what’s called “seitan”.  Contrary to believe, modern vegans didn’t invent mock meats. Seitan dates back over 1,000 years ago to 6th century China. Buddhist Monks (early vegetarians) created it by soaking their wheat flour until the starch washed away. They cooked the results & sparked a new wave.

 

I think a lot of people are scared of vegan food because they don’t understand the history of food period. Nothing is new under the sun. Vital wheat gluten has been a part of human diets longer than a lot of foods we eat today. In fact, every vegan meat you see that contains wheat is made of VWG. There’s nothing to fear about your health because this is the most nutritious part of wheat. If you’re worried about the taste, it will only taste like whatever you season it with. Be Great.
