Ciabatta French Toast (Featured in BREAKFAST OUT THE MUD)
1 Ciabatta loaf sliced
1 1/2 Cup non-dairy milk
3 TBS flaxseed meal
1 TBS maple syrup
1 tsp cinnamon
1/2 tsp vanilla
1/4 tsp nutmeg
coconut oil or
vegan butter for cooking
1. Mix all ingredients except bread and oil in a bowl and allow to thicken for 10 minutes.
2. Heat butter or coconut oil in a pan on medium high heat.
3. Dip a slice of ciabatta in the mixture and let the excess drip off.
4. Place slice in pan and cook for about 3 minutes on each side until browned. Serve warm.
