Cold Buster Soup

 

  • 6 Cups vegan chickn broth**
  • 2 Cups kale chopped
  • 1 potato diced
  • 1/2 onion sliced
  • 1/2 jalapeño sliced
  • 3 garlic cloves minced
  • 1in piece of ginger diced
  • 1/4 Cup lentils
  • 1/4 Cup quinoa
  • 1 TBS olive oil
  • 2 tsp turmeric powder
  • 1 tsp salt
  • 1/4 tsp black pepper
  • Fresh oregano, thyme, basil
  • Lemon juice

 

  1. Heat olive oil on low and onions. Cook slow until translucent.
  2. Add garlic, jalapeño, ginger and turmeric and stir continuously to prevent burning.
  3. Add broth and bring to a boil.
  4. Once boiling stir in potatoes, lentils, quinoa, salt, pepper and lemon juice. Turn heat to low, cover and cook for 12min.
  5. Stir in kale, fresh herbs and cover again for another 5min. Add more salt to taste and serve.

 

**You can use vegetable broth.
