Cold Buster Soup
- 6 Cups vegan chickn broth**
- 2 Cups kale chopped
- 1 potato diced
- 1/2 onion sliced
- 1/2 jalapeño sliced
- 3 garlic cloves minced
- 1in piece of ginger diced
- 1/4 Cup lentils
- 1/4 Cup quinoa
- 1 TBS olive oil
- 2 tsp turmeric powder
- 1 tsp salt
- 1/4 tsp black pepper
- Fresh oregano, thyme, basil
- Lemon juice
- Heat olive oil on low and onions. Cook slow until translucent.
- Add garlic, jalapeño, ginger and turmeric and stir continuously to prevent burning.
- Add broth and bring to a boil.
- Once boiling stir in potatoes, lentils, quinoa, salt, pepper and lemon juice. Turn heat to low, cover and cook for 12min.
- Stir in kale, fresh herbs and cover again for another 5min. Add more salt to taste and serve.
**You can use vegetable broth.
