Garlic Tomato Spaghetti
Grab:
- Spaghetti
- 1/4 Cup extra virgin olive oil
- 1/2 small onion sliced
- 1 Cup cherry tomatoes
- 3 garlic cloves minced
- 1 tsp salt
- 1/2 tsp red chili flakes
- 2 kale branches
- sprinkle black pepper
- fresh cilantro chopped
- lemon squeeze
1. Cook spaghetti according to directions and then drain.
2. While the spaghetti is cooking heat oil in pot on medium heat.
3. Add onions and tomatoes and saute until onions start to become translucent and tomatoes begin to blister.
4. And garlic, salt and chili flakes and cook until garlic becomes fragrant (DON'T BROWN THE GARLIC)
5. Pour oil-tomato mix into a bowl and add kale to the pot while it’s still warm and saute for about 5 min.***
6. Mix spaghetti, oil/tomatoes and kale in a bowl. Add cilantro, pepper & squeeze lemon over. Add salt to taste.
***cooking the kale in the same pot as the oil mixture let’s the kale soak up any leftover flavors. Cheat codes.
